The Winery’s Story
Agricola D'Ausilio – Farming that respects the soil and the ecosystem. Enjoy fruit with an authentic flavour without depleting the soil, nourishing it so that we leave it more fertile than we found it. Intervene as little as possible. Winter and spring pruning, and a few treatments with copper and sulphur. In winemaking, we aim to intervene as little as possible, limiting the use of winemaking products to sulphur dioxide when necessary. The grapes are carefully selected by hand and vinified separately according to each plot’s potential. Cellar operations, from racking to bottling, are carried out gently, often without pumps, and following the phases of the moon.
