The Winery’s Story
La Cà Nova stands in Cella Monte, a small village in the province of Alessandria, in the heart of the Monferrato hills. Its origins date to the 17th century, and the spirit of local tradition remains alive here. Our farm and winery also preserves an underground treasure: an Infernot. Infernot are small underground chambers excavated entirely by hand in Pietra da Cantoni, a local calcareous-marly sandstone formed and deposited beneath our hills millions of years ago. These rooms were designed to store wine and food because they maintain a constant temperature through the seasons, like a natural refrigerator. Without outside light or ventilation, they also remain cool with constant humidity.
