History of the Cellar
"Described as “Italy’s best kept secret”, Umbria is a rural Italian idyll, a region in central Italy known for its lush green countryside, unspoiled villages as well as exceptional traditional food and wine production. Here, the days go by slowly; a life that has barely changed over the years where man and nature still live in perfect harmony. It was this authenticity and this particular character of the region that inspired the owners to invest in Torre Bisenzio. A former dilapidated farm, rich in the charm and local tradition of Umbria, over the years it has regained its place in the region: an organic farm active in multiple sectors where there are also two beautiful villas: the Tower and the Casa Bassa. The estate is dedicated to preserving the historic native cattle breeds. The white cattle that dot the fields belong to an ancient cattle breed, the Chianina, raised in Tuscany, Umbria and Lazio for over 2000 years. The quality of its meat is known for its goodness and its nutritional value, Chianina is the meat par excellence used in the preparation of the famous and super "bistecca alla fiorentina". Torre Bisenzio has contributed to increasing the Chianina population in the area, and now boasts a vigorous herd of 125 animals that roam blissfully in the large spaces of the estate."
