The Winery’s Story
The name Zýmē comes from Greek and means yeast: an essential element in winemaking and a symbol of naturalness, a fundamental value in Celestino Gaspari’s life and work, and of fermentation understood as a continual willingness to change. In keeping with this philosophy, the logo depicts a vine leaf containing a pentagon, symbolising the five principal elements of wine production: people, vines, earth, sun and water. Restoring a habitat in which people and nature live in harmony is both the starting point and the aim of the approach championed by Celestino Gaspari and Zýmē. It seeks a renewed relationship with the environment, with people as its natural custodians: protecting the land while also renewing and reinterpreting it. Environmentally sustainable farming, an understandable finished wine, knowledge of production processes and respect for nature’s timing are central to Zýmē’s approach. Wine becomes an expression of a simple life in harmony with the earth, at a time when the abundance of an illusory prosperity risks putting human survival itself in danger. Tradition and innovation are complementary paths in Zýmē’s production. Care for Valpolicella’s historic wines sits alongside the invention and exploration of new wines that express and renew the area. Culture, history, tradition and innovation: a glass of wine contains many things. For Celestino Gaspari, above all, it is yeast for the mind and for the growth of a project: Zýmē.
